Congratulations to the Le Cordon Bleu Sydney team of students and chefs who successfully competed and brought back a 'choco-block bag' of medals from the Callebaut Chocolate Gateaux and the Chocolate Showpiece Competitions the main features of the Hunter Valley Chocolate Festival on 6th and 7th August.
Both competitions were open to Chocolatiers, Pâtissiers, Chefs and Apprentices from Australia and Le Cordon Bleu was strongly represented by nine current students and four graduates, more than any other educational provider. The competition was viewed by thousands of visitors at the festival over the weekend.
Pâtisserie Chef Lecturer Angelo Roche led a team of five students to compete in the Callebaut Chocolate Gateaux Competition. Each competitor created two pre-made Chocolate Gateaux which were decorated and garnished in front of a panel of judges including Pâtisserie chefs from the Pastry Team, Australia who will be representing Australia at upcoming international competitions. Justin Yu, a recent graduate of Le Cordon Bleu Sydney, was also present at the Festival as a member of the Pastry Team, Australia. The entrants Gateaux were judged on flavour, overall eye appeal, texture, chocolate flavour and artistic finish. Cooking star Fast Ed from the television program Better Homes and Gardens led the awards presentation.

Special congratulations to Charmaine Ng who took out first prize in the Student/Apprentice category with an exceptional gateau.
Pâtisserie Chef Teacher Joseph Roche also led a team of students to compete in the Chocolate Showpiece Competition judged by a panel of industry experts including macaroon maestro Adriano Zumbo.
Each competitor designed and produced a Chocolate Showpiece following the theme 'Gardens' made from couverture chocolate with a maximum height of 160cm and maximum width of 50cm. Showpieces were taken to the competition in pieces and competitors had a 4 hours to assemble the Showpiece ready for judging.

Chocolate Showpieces will be on display at the Le Cordon Bleu Open Day on Thursday 25th August at the Sydney Culinary Arts Institute, Ryde College from 3:00 pm to 7:00 pm. A selection of the award winning Chocolate gateaux will be demonstrated at the Open Day.
